Ingredients
- 4 large dried chillies.

3 shallots, preferably Asian (red), peeled, chopped.
- 2 garlic cloves, peeled.
- 3cm piece fresh ginger, peeled and sliced.
- 2 small red chillies, seeded and sliced.
- 4 stems lemongrass (white part only), sliced.
- 8 macadamia nuts.
- 1 tsp shrimp paste.
- 2 tsp ground turmeric.
- 2 tsp ground coriander.
- 1 tsp palm or brown sugar.
- 3 tbs peanut oil.
Method
- Soak dried chillies in hot water for 5 minutes, strain and then slice.
- Add all ingredients into a small blender and blend for 1 – 2 minutes or until smooth and all ingredients are combined.
*****This can be done in a mortar and pestle, just add 1 ingredient at a time and ensure that it is all mashed and mixed well before adding the next ingredient.*****
